Have you tried baked oats yet? It's the perfect comfy breakfast for a slow weekend morning. Made this yesterday to cure my boyfriends hungover. I believe it helped. Loads of healthy fats, vitamins and minerals like vitamin C & potassium to bring back the balance. But above all it's so freakin' good!

- 4 dl (1,7 cup) rolled oats
- ½ tbsp baking powder
- 1 tsp cardamum
- 0,5 tsp vanilla powder
- 0,5 tsp salt
- 1 dl cashew nuts, coarsely chopped
- 1 dl sweet almonds, coarsely chopped
- 4 dl (1,7 cups) milk
- 1 tsp honey
- 3 eggs
- 1 tbsp coconut oil
- 4 tbsp peanut butter (no sugar, only peanuts)
- 2 tbsp water
- 2 bananas, sliced
- 100 g raspberries
Preheat the oven to 150 C / 300 F.
Mix the dry oat ingredients in a bowl. Add the wet ingredients and mix together.
Grease a glass oven-safe dish (40 x 30 cm / 16 x 12") with the coconut oil, pour over the batter and place in the middle of the oven. Bake for 15-20 minutes or until golden. Take the time to prepare the toppings and peanut butter sauce.
Add the peanut butter to a sauce pan, add the water and stir until smooth while heating it up a bit.
Take out the oats and eat together with the fruity and nutty toppings.
