Baked almond and cashew oats

Have you tried baked oats yet? It's the perfect comfy breakfast for a slow weekend morning. Made this yesterday to cure my boyfriends hungover. I believe it helped. Loads of healthy fats, vitamins and minerals like vitamin C & potassium to bring back the balance. But above all it's so freakin' good!

 INGREDIENTS

Oats

  • 4 dl (1,7 cup) rolled oats
  • ½ tbsp baking powder
  • 1 tsp cardamum
  • 0,5 tsp vanilla powder
  • 0,5 tsp salt 
  • 1 dl cashew nuts, coarsely chopped
  • 1 dl sweet almonds, coarsely chopped
  • 4 dl (1,7 cups) milk
  • 1 tsp honey
  • 3 eggs 
  • 1 tbsp coconut oil 

Toppings

  • 4 tbsp peanut butter (no sugar, only peanuts) 
  • 2 tbsp water 
  • 2 bananas, sliced
  • 100 g raspberries 

INSTRUCTIONS

  1. Preheat the oven to 150 C / 300 F.

  2. Mix the dry oat ingredients in a bowl. Add the wet ingredients and mix together.

  3. Grease a glass oven-safe dish (40 x 30 cm / 16 x 12") with the coconut oil, pour over the batter and place in the middle of the oven. Bake for 15-20 minutes or until golden. Take the time to prepare the toppings and peanut butter sauce.

  4. Add the peanut butter to a sauce pan, add the water and stir until smooth while heating it up a bit. 

  5. Take out the oats and eat together with the fruity and nutty toppings.
